A two hour overview and hands on class on making sugar paste subtleties. To make simple subtleties, students will be provided with sugarpaste, marzipan, a marble surface and a handout. Food coloring, spray bottles of orange blossom or rosewater, and cookie cutters will be available. Students who have marble rolling pins or rolling pins made for fondant should bring them, but smooth glass jars will be provided for use as rolling pins for those students who don’t have their own.
Fun with Sugar will cover:
1. Types of sugar and marzipan/marchpanes
2. History of the use of specific sugar forms in subtleties
3. Factors to consider when choosing the form of sugar for your subtletie
4. The use of color
5. Methods of forming sugar
6. Making the subtletie in class
The handout includes recipes, sources and some photos.
