While primary documentation of how bread was made in the medieval period in Europe is thin, there is a large collection of secondary sources that can be utilized to recreate a picture of what period bread was like. This class shows that documentation in depth, bringing to life what was eaten by both the peasant and the noble, focusing primarily on England between the 10th and 16th century but touching on the wider picture also. Students will walk away from this class knowing how to make these breads.
