On the curing and smoking of meat at home. Modern food safety with a perspective on medieval practice, finishing with a detailed instruction in the art of making of bacon. Handout of formulas explaining the calculation of dry and brine cures for different types of products, and a recipe for a basic, safe bacon cure. There will be bacon.
