Description
Working with the fat from the pig butchering class, we'll discuss both wet and dry rendering methods, the difference between lard produced from each method and from various parts of the pig and the historical uses for the finished product. We will render as much lard as we can get from the butchering. Bringing your own sharp knives and cutting boards is a plus but not necessary. You should bring an apron to protect your garb.
