Description
Bread-making is a process that seems simple, essentially involving the mixing of just four ingredients. However, there’s a lot more science to it than meets the eye. In this very hands-on class you will learn the chemistry, biology, and physics behind bread-making, describing the details of fermentation, yeast, gluten, gas retention, and much more. Ingredients and initial instructions will be sent to enrolled students 1 week prior to the class, which will be used during the lab. By the end of class you will be ready to bake your own loaf! Handouts are available at my blog, as well as the class recording (after the weekend) at http://www.arriamarina.com
