Gouda Process 1
The Process of Making Gouda: From Milk to pressed cheese. Students can come and go throughout the day to see the basics of making a semi-hard cheese. Part 1 consists of equipment discussion, prepping, and additives to make cheese happen including Rennet at 11. 4 Cheeses will be produced which can be split and taken home. Participantants should plan on coming for the 10am, 12 noon and 4:30pm sessions to be "eligible" to take home a cheese. This practical session will teach the student the basics of working with silk and metal threads. The kit will produce a tudor rose learning the following stitches: Tent Stitch in silk, Reverse Chain using metal and Gilt Silk Twist and the 4 legged spider using metal thread. The class comes with a printed handout and kit to practice stitches. Please bring your own embroidery hoop and scissors if you have them. Loaners are available if not. Stranded knitting for everyone.
2 color knitting was another form of fiber art/picture making in period. There are many examples of late 1400s colorwork knitting in arabic knitted, heraldic pillows for spanish royalty. We will begin a small Atlantian badge in class. 6 kits will be available for 6 dollars each but you can bring your own supplies if you like.
The kits will include 50 yards each of blue/white yarn and 10 yards of black, appropriate sized needles, corks and a chart. Extra charts and a helpful hint hand out will also be available in a limited quantity for 1dollar a packet to cover printing costs. Registration guarantees a packet if you request it ahead of time.

If experienced and want to bring your own kits instead of buying, the kit list includes:
- 60 yards each of 2 distinct colors of yarn {the pattern I have is the Atlantian arms so blue and white is nice but any 2 distinctly different colors will do}
-A set of 5 knitting needles appropriate for the yarn {if one or 2 are not exactly the same gauge it is fine if they are close , it all works out!}
-One yard of a third contrasting color of yarn OR, 8 split markers
-2 blank sheets of paper and at least 4 paper clips.
Those who bring their own kits can purchase the handout including the pattern for 2 dollars. |

Folktales and Fairy Tales – Links Across Time and Place
Many folktales and fairy tales can be found as far back as the first century. They started out as oral traditions and at some point were put into writing. In spite of their oral origins, it is interesting to see how they appear in countries near and far. Can you imagine how they changed in the telling and retelling and from country to country. In addition, there are so many of them that a classification system has been developed. We will look at example folktales and fairy tales from each genre and discuss their similarities and differences. We will also look at what makes a story a folktale or fairy tale and discuss how they differ from legends. We will also look at how they are written, i.e. whether they are a poem, a narrative, or just a story told to children and adults. (Children are welcome to attend.) |

Advanced Knitting
There are many techniques employed in knitting beyond the knit stitch and purl stitch. I'll cover the period-appropriate ones with an explanation of where they're from. I'll go over many of these techniques, including, in the second hour, ones developed since the end of our period. As most knitting books and classes include a tutorial on how to knit, and I advertised this as an advanced class, I'll skip the basic how-to of knit and purl, cast-on and cast-off. I have 4 cast-on methods, 3 cast-offs, grafting, picking up, short rows, turning a heel, shaping in general, and if desired, cabling and colourwork. I will also discuss the flat circle knit from center method employed for the Elizabethan flat cap and its ilk. Please bring some needles and some yarn of a comfortable weight for you to work with, as we will be trying many of these techniques. Class is limited to 5 hands on students, but auditors are welcome. |

The Process of Making Gouda Part 3: From Milk to pressed cheese. 10am-5pm. Students can come and go throughout the day to see the basics of making a semi-hard cheese. Clean up space, Distribute cheese with finishing instructions 4 Cheeses will be produced which can be split and taken home. Participantants should plan on coming for the 10am, 12 noon and 4:30pm sessions to be "elegible" to take home a cheese. Pressings are not required attendance, but students should plan on seeing the process at some point in the afternoon. |
